SOUS CHEF POSH PETERBOROUGH UNITED

The Role and Responsibilities of a Sous Chef

REPORTING TO:​Head Chef, Catering Manager or (Front of
House Manager when HC or CM absent)
OVERALL OBJECTIVE: ​To manage the kitchens operations in order to provide the appropriate Food Service to the satisfaction of the Client and the Company.

Sous Chef Responsibilities:

1. To make a continuous assessment of the performance of all staff under your supervision in order to establish supervision and training needs and development potential and discuss with Head Chef

2. To ensure that training is carried out in the location to meet identified needs and requirements of the Company training policy.

3. To ensure that all staff are aware of their duties and the standards required.

4. To ensure that all kitchen staff are aware of their Health and Safety responsibility and receive the appropriate training.

5. To attend training sessions and catering meetings when required.

6. To attend to any other reasonable request made by the Client or VCP Management.

7. To take responsibility for contributing towards your own development with the guidance of your manager.

8. To deputise in the absence of the Head Chef as and when required.

9. To take responsibility for the smooth and efficient running of the kitchens as appropriate

10. To ensure that all food production duties are carried out in a timely fashion to ensure a smooth service.

SOUS CHEF RESPONSIBILITIES 2

11. To ensure food standards and costs agreed with the Head Chef and CM are consistently achieved and maintained.

12. To assist the Head Chef and CM, in planning menus and delivering a high quality of cooking and catering that exceed customer expectations.

13. To compile all food orders under your supervision.

14. To constantly endeavour to improve the standard of food preparation and presentation and to incorporate new technology as it becomes available.

15. To possess an up to date knowledge, awareness and interest in recent, current and future food and industry trends.

16. To be passionate about developing and producing new service styles and food concepts, including cooking homemade dishes in the location

17. To ensure all food storage areas are maintained in a clean and tidy condition

18. To ensure cleaning areas under your control are maintained to a high standard in accordance with cleaning schedule.

19. Comply with all regulations regarding Health and Safety and Food Hygiene including specific Company procedures.

20. To gain an understanding and follow Company quality systems and procedures.

21. To take necessary steps to ensure the kitchen area complies with Food Hygiene Regulations and Health and Safety Act.

22. To ensure all equipment is cleaned and maintained in good working order reporting any damage malfunctions to the Head Chef / GM.

23. To ensure equipment and food temperature readings are taken and recorded on a daily basis.

24. To ensure food samples are taken and stored correctly, on a daily basis.

25. To motivate and lead by example ensuring you and your team have fun at work and are proud of your efforts.

26. To ensure that your restaurant has a fun feeling which customers enjoy and can relax away from the workplace.

27. Show commitment to company values in all aspects of your role.

28. To act as a positive ambassador for the business.

29. To ensure that you deliver what you promise to customers, clients and your team.
30. To treat others as you would expect to be treated.
